This wine comes from a selection of each of the 10 plots of the Pichot family vines situated among the best placed premier coteau vineyard sites of the village and near the family winery in the Vallee de Nouys. Fermented in stainless steel then aged in all new oak barrels for 12 months being bottled in September 2021. The richness and density of the wine has completely masked any influence of the oak and the wine shows remarkable balance and purity with freshness and acid structure to age this wine easily for decades. Inspired and encouraged by the best young sommelier of 2021 Marie Wodecki from Hotel Crillon in Paris, this is a stunning success and while perfectly balanced and extremely enjoyable right now it will age effortlessly in a good cool cellar. The ferment for this cuvee is allowed to stop naturally where it wants so the 2020 vintage of this wine finishes with 14 gms/ltr of residual sugar (2021 has just 1 gm/ltr residual) and this has perfect balance and depth without feeling heavy and the tiny residual sweetness gives perfect harmony and balance to the very bright nervy acidity of 2020. Incredibly long and persistent finish with brilliantly focused flavours and great length. This tiny cuvee elevates the Pichot range to a new level. Just 10 barrels made and this is a brilliant success that will more than comfortably compare with the very best wines of the region at even higher prices.
